Sambal Goreng Bee Hoon with Shitake Mushrooms






Ingredients
Cooked Bee Hoon
1 x tablespoon of sambal sauce
2 x Shitake Mushrooms
Chai Xin
Salt and sugar to taste
 Ikan billis (optional )

Cooking Time: 
10mins

Directions 
1. Use a medium size non-stick pan.
2. Heat up pan on medium and add 2 tablespoon of oil.
3. Add in shitake mushrooms, cooked till slightly brown
4. Add in chai xin and 2 tablespoon of water using medium high heat for 1 min or till veggie shrinks.
5. Add in beehoon, stir to spread them apart.
6. Add in Sambal sauce.
7. Lastly salt and sugar to taste.

Radish Thick Been Hoon Soup




Servings for 2-4

Ingredients
1 medium size radish aka white carrot slice and cut into quarters.
Spare pork ribs (1 box if you purchase from super market - around 5-6 pieces)
Mince pork ( 1 box ) Seasoned with white pepper, and light soy sauce for at least 20mins.
Veggie of your choice (1 packet)

Noodle of your choice - (Thick BeeHoon) 
1/2 Chicken stock
2 pinch of aijinomoto
2 pinch of salt
1 pinch of sugar
Spring onions (Optional)


 Prep time:
 10 mins



Cooking time:
2.5 hours



Directions

In a large pot, place spare ribs into water and bring it to a boil.
Remove any floating particulars if any.
Add in radish and cook for an 1 hour in medium high heat.
Lower it to medium low and and continues to simmer for another 1 hour
Add in mince pork and let it cook for 10mins
Once the mince meat is ready, it floats.
Remove mince meat and place it in a bowl to prevent over cooking.
Add chicken stock and the rest of the seasoning ( taste the soup and adjust to your preference)


In another pot, cook thick been boon and veggie
Place in a bowl and pour radish brooth + mince meat.
Garnish and you are ready to serve!

Homemade onion rings





Ingredients
3 tablespoon plain flour
1 tablespoon corn starch
1/4 can of carbonated water
2 teaspoon of meat seasoning
bread crumbs
3 large onions




Prep time: 5 mins
Cook time: 5mins



Directions

1. Preheat oil in a large frying pan
2. In a large bowl, combine flour, starch, seasoning and soda and mix till you have a smooth batter
3. Add in sliced onion rings into the batter a little at a time
4. In another bowl, pour in your breadcrumbs and coat the oinions rings
5. To test if oil is hot enough, drop a few breadcrumbs and see if oil is sizzling.
6. Place onions rings in pan in medium low heat, fry till golden brown.
7. Serve with your favourite sauce.

Chicken Curry noodles






Ingredients (Serves 2)

1 x packet of A1 curry sauce
2 tbs of curry powder
6 curry leaves
2 medium onions
4 potatos
8 chicken joints
1/2 cup of coconut milk
2 cups of water
Yellow noodles
Thick rice vermicelli


Prep time: 15mins
Cook time: 50mins





Directions for noodles.
1. Boil a pot of water
2. Cook yellow noodles on high heat for 1 min and add in rice vermicelli
3. Remove noodles after 2-3 mins and raise with cold water
4. Use the remaining water to boil the potatoes still semi soften.


Directions for curry

1. Cut onions into chalky peices
2. In a large non-stick pan, add in oil on a medium high
3. When oil is warm, put in the chicken for 2 mins,
4. Then the onions, and let it cook for another 2 mins, stiring to prevent burning the onions.
5. Add in curry mixture and stir for another 2 mins.
6. Pour water, curry powder and leaves and bring it to a boil.
7. Turn the heat down and add in semi soften potatoes. Cover with a lid and let it simmers till potatos are fully cooked, constantly stiring every 5-10 mins to prevent burning approximately 30mins.
8. Add in coconut milk and let it simmers for 10mins.
9. Season according to taste if needed.
10. Serve with noodles.


Other information
If you have more time, you could cook the potatos in the curry instead.

Easy Seaweed Spaghetti with bonito flakes

Ingredients

Pasta of your choice
Seasoned seaweed of your choice.
Bonito flakes
Salt to taste
3x tablespoon of butter

Optional ingredients
Dried Chilli flakes
Button mushrooms
Seasme seeds

Other information
Seaweed: You can use the ready pack ones with seasoning and seasme seed.
I bought mine from diaso.

Directions

1. In a pot, fill water and salt salt and bring it to a boil
2. Add pasta and drain once cook, set aside
3. Rinse with tap water (Optional)
4. Melt butter in a pan in medium low heat.
5. Add in slice mushrooms, salute till it turns a little brown
6. Add cooked pasta, make sure all pasta are coated with butter for that hint of flavor.
7. Add seaweed, dried chilli, salt & pepper to taste. Give it a good mix.
8. Serve on plate, finish off with bonito flakes
