Homemade onion rings





Ingredients
3 tablespoon plain flour
1 tablespoon corn starch
1/4 can of carbonated water
2 teaspoon of meat seasoning
bread crumbs
3 large onions




Prep time: 5 mins
Cook time: 5mins



Directions

1. Preheat oil in a large frying pan
2. In a large bowl, combine flour, starch, seasoning and soda and mix till you have a smooth batter
3. Add in sliced onion rings into the batter a little at a time
4. In another bowl, pour in your breadcrumbs and coat the oinions rings
5. To test if oil is hot enough, drop a few breadcrumbs and see if oil is sizzling.
6. Place onions rings in pan in medium low heat, fry till golden brown.
7. Serve with your favourite sauce.

Chicken Curry noodles






Ingredients (Serves 2)

1 x packet of A1 curry sauce
2 tbs of curry powder
6 curry leaves
2 medium onions
4 potatos
8 chicken joints
1/2 cup of coconut milk
2 cups of water
Yellow noodles
Thick rice vermicelli


Prep time: 15mins
Cook time: 50mins





Directions for noodles.
1. Boil a pot of water
2. Cook yellow noodles on high heat for 1 min and add in rice vermicelli
3. Remove noodles after 2-3 mins and raise with cold water
4. Use the remaining water to boil the potatoes still semi soften.


Directions for curry

1. Cut onions into chalky peices
2. In a large non-stick pan, add in oil on a medium high
3. When oil is warm, put in the chicken for 2 mins,
4. Then the onions, and let it cook for another 2 mins, stiring to prevent burning the onions.
5. Add in curry mixture and stir for another 2 mins.
6. Pour water, curry powder and leaves and bring it to a boil.
7. Turn the heat down and add in semi soften potatoes. Cover with a lid and let it simmers till potatos are fully cooked, constantly stiring every 5-10 mins to prevent burning approximately 30mins.
8. Add in coconut milk and let it simmers for 10mins.
9. Season according to taste if needed.
10. Serve with noodles.


Other information
If you have more time, you could cook the potatos in the curry instead.
